This was the sixth stop of the day on our #10Tacos24Hours tour of Houston. At El Semaforo de Monterrey, the tacos are served "al vapor" style, which is a northern Mexican specialty. The tortillas are steamed, rather than warmed up on a griddle. The result is a soft and slippery texture - which may sound strange but I swear is good. I got the shredded beef while my boyfriend got the beans. The ingredients are well seasoned and the shredded cabbage on the side helps provide a crunchy textural element. The tomatillo sauce is really flavorful without being too spicy.
